Katie's Easy Granola
2c old-fashioned/rolled oats
4c nuts of your choice (pecans, almonds, walnuts, pistachios, cashews, macadamia, brazil etc) chopped
1c seeds of your choice (pumpkin, sunflower, etc)
1/3 c - 1/2 c honey, raw if available
1/4c chia seeds
1/4c flax seeds
1/4c uncooked quinoa (trust me!)
1/2c unsweetened raw coconut (optional)
1/3 c expeller-pressed canola oil or organic coconut oil (melted)
2 Tbsp black strap molasses (optional)
2 tsp vanilla
½ tsp cinnamon
¼-½ tsp kosher salt
Mix together and bake on two cookie sheets (lined with parchment = easy clean up!) for 28 minutes at 275-300 degrees. Molasses helps the granola stay sticky in chunks. I also don’t recommend stirring granola while baking if you like chunks. Store in glass container when cool.
Can add 1/2c raisins or other dried fruit, if desired, before storing.
