School-Friendly Nut-Free Granola Bars

I love granola, especially chunky granola. I eat it almost every morning with a healthy dollop of satiating full-fat plain coconut yogurt and some phytonutrient berries. Yum.

The way I make granola is nutrient-dense and balanced, not a sugar bomb like most of the store-bought brands.

But, of course, most granola falls apart…unless you add an egg white. Then it sticks together magically and can be cut into bar form.

Voila - a way to make homemade granola bars for snacking!

This recipe is nut-free so that they are friendly for school-aged children to bring for snack time, but you could substitute nuts for some of the seeds if you don’t have that restriction. Imagine how well your kids will learn when they have this satiating, well-balanced zinc/magnesium/iron-rich snack in their bellies.

Ingredients

Granola Recipe: Katie’s Easy Granola, Pumpkin Harvest Granola, or Well Refined Gran-Free Granola

1 egg white


Directions

  1. Choose any of my granola recipes: Katie’s Easy Granola, Pumpkin Harvest Granola, or Well Refined Gran-Free Granola.

  2. Make substitutions as desired to eliminate nuts if wanting to make school-friendly or allergy-friendly so that the total volume is the same.

  3. After mixing, add one egg white and stir well. Put mixture on a unbleached-parchment lined rimmed metal pan and spread to about 3/4” thick. Place in oven as directed but DO NOT STIR during baking. After baking, allow to cool completely over the course of several hours so that it remains crunchy. Then cut into desired bar shapes.
