Simple Radicchio Salad with Tahini and Lemon


I have a lovely friend who’s working from home along with her spouse. Every afternoon at snack time they meet in the kitchen, and this simple salad is one of their favorites. I hope it inspires you to reimagine date night and snack choices!

Radicchio is a bitter lettuce with a gorgeous red or purple color. That distinctive color comes from pigmented antioxidants called anthocyanins. Anytime you see that red-purple hue in Nature, run to it! Foods like blueberries, blackberries, cherries, eggplant, cranberries, and purple cabbage also have anthocyanins. This pigment may benefit heart and intestinal health and repair cellular damage from free radical oxidation.

Ingredients

1 head of radicchio lettuce, torn into leaves

Extra-virgin olive oil drizzle

Tahini drizzle

Juice of 1/2 to 1 lemon

Kosher salt & freshly ground pepper


Directions

Place radicchio leaves on a plate and drizzle with EVOO, tahini, and lemon juice. Sprinkle with salt and pepper. Enjoy!
