Herb Crunch Bibb Salad Tower

Who’s not impressed by a little architecture at their meal?

I ordered a Salad Tower at a restaurant recently and was SUPER impressed with the presentation, but not so impressed with the heavy dressing and sopping lettuce leaves…so I decided to engineer my own. (And, guess what, it’s pretty easy!) 

What makes salads balanced is the incorporation of balance with fiber + fat + protein…and flavor. Our herby Green Goddess Dressing is the perfect accompaniment to the sweet simpleness of bibb lettuce along with a bit of crunch from the fat + protein of chopped nuts. 

If you stacked this salad tall enough, it could be your main course for a satisfying lunch or dinner, but it also works well as a side. I designed this recipe with enough fat and protein to sustain you for several hours.

Serves 2 (for a meal) or 4 (as a side)

Ingredients

1 head of bibb (also called Boston or butterhead) lettuce

¼ cup Brazil nuts

¼ cup salted shelled pistachios

¼ cup fresh parsley 

1 teaspoon extra-virgin olive oil

Don’t forget the Green Goddess Dressing!

Directions

  1. Wash and dry bibb lettuce leaves, being careful to separate them intact from the stem.

  2. Combine nuts, parsley, and olive oil in a food processor and pulse until nuts are chopped and ingredients combined to create an herb crunch.

  3. Stack the lettuce leaves and use a 4 to 5-inch round cookie or biscuit cutter to slice the desired shape. 

  4. Assemble your salad tower by starting with 2 to 3 layers of lettuce topped with 1 to 2 teaspoons of dressing and 1 tablespoon of herb crunch, then repeat until desired height is reached.
